Chef Yasutaka Suzuki brings decades of training to every piece he prepares, shaping an experience that highlights the natural character of the fish and the harmony between temperature, texture, and flavor. His approach draws from tradition while using modern methods that bring out subtle, complex notes in both the fish and the rice.
Every detail is chosen with care. The ceramics, the flow of the courses, the appetizers, and the drinks are all selected to support the taste of the sushi itself. The result is an intimate meal where simplicity becomes something expressive and memorable.
